Tomorrow is my office holiday party so I wanted to make something special. I was reading a post on Oh, Bite It and thought this recipe would be perfect. Everyone loves cheesecake… (at least most people) and I like the idea of individual mini no-bake cheesecakes so everyone can have their own and not have to cut into a big cake. I started out with the following ingredients:
- Jell-O No-Bake Cheesecake mix
- Crushed graham crackers (included in the Jell-O cheesecake mix)
- 12 large Reeses Peanut Butter Cups (can also use your favorite Girl Scout cookie such as Samoas, Peanut Butter Patties or Thin Mints)
- 36 mini marshmallows
- Cupcake liners
- 1 bag mini chocolate chips
I started out filling a cupcake pan with paper liners and placed one peanut butter cup into the bottom of each cake hole. This can also be done with your favorite chocolate girl scout cookie. Samoas, Peanut Butter Patties and Thin Mints are good alternatives to the peanut butter cup because they are coated in chocolate and will prevent the cookie from becoming soggy. I think it’s important to use liners so the peanut butter cup or cookie stays as a separate crust and the cheesecake mixture does not run down the side.
Then I started on the cheesecake mixture. The Jell-O box calls for 1 1/2 cups milk to be added to the cheesecake mixture. I used whole milk so it came out nice and rich. I whisked the milk into the powder and then poured a small amount of the mixture over the peanut butter cup into each cupcake hole. I filled each cup until there was no mixture left.
The cheesecake box comes with crushed graham crackers for the crust, so I used them as a decoration instead to go with my s’mores theme. I sprinkled them on top of each cheesecake followed by mini marshmallows and mini chocolate chips.
Then I placed the cheesecakes in the refrigerator for one hour to set.
It came out pretty good! I hope they like them tomorrow =)
