Tomato Basil Zucchini Pasta

Most people enjoy pasta. What they don’t enjoy are the calories and carbohydrates. Zucchini pasta makes it possible to enjoy the taste of pasta without feeling guilty. It is also very simple to make. You will need to start off with:

  • 3 zucchinis,
  • 1 four sided grater
  • 10-15 multi colored cherry tomatoes
  • 1 jar of your favorite tomato sauce
  • parmesan cheese

Take one zucchini at a time and place it in a downward motion in order to make a spaghetti like ribbon. Turn the oven onto 350 degrees.

You should start to see a pile of shredded zucchini. Continue with each zucchini making sure not to grate any of the seeds. You should throw away the white zucchini (seeds only).

Once you have grated all of the zucchinis, you want to start chopping the cherry tomatoes and place them in the pan with the zucchini.

Then take the jar of tomato sauce and pour about one cup over the zucchini. I use Rao’s Homemade Hot Arrabbiata Fra Diavolo Sauce. It gives the pasta a nice kick.

Next, stir the sauce into the pasta and bake in the oven for 40-60 minutes, stirring every 15 minutes.

You may want to top it with your favorite parmesan cheese or ricotta cheese. It helps cut the heat from the tomato sauce. Its one of my favorite dishes.
