One thing you should know about me is that I love breakfast. I also have a huge sweet tooth and love anything that resembles custard or pudding. This recipe does exactly that. It tastes like creamy chia pudding and is perfect on a cold morning.
- 1 cup McCann’s Steel Cut Irish Oatmeal
- 4 cups almond milk
- 1/4 cup chia seeds
- 1 cup water
- 2 tbsp cinnamon
- pinch nutmeg
- 2 tbsp vanilla
Measure 1 cup of oats and 4 cups of almond milk and pour into a pot on high heat. I like to use sweetened almond milk so you don’t have to add additional sugar.
Next, add 1/4 cup of chia seeds along with one cup of water. Chia seeds expand in liquid so the cup of water allows them to expand without making the oatmeal too thick.
Note: chia seeds are one of the best plant sources of omega-3s, even more than salmon. These little seeds absorb 10x their weight in water forming a gel like outer layer, which make you feel full faster. They help with hydration and digestion. They are also very high in fiber.
Add the vanilla, nutmeg, and cinnamon and give it a good stir.
Note: cinnamon is known to help stabilize blood sugar and is a rich source of antioxidants. Try to add a pinch of this spice whenever you can!
Boil on high heat for 5-10 minutes until some of the liquid has evaporated and the oats have cooked.
Once you remove the mixture from the heat, it will start to thicken as it cools
Serve hot with a sprinkle of slice almonds and strawberries.
