Sweet potatoes are my favorite of the starchy vegetables. It’s probably because they are the sweetest! They are very easy to make, great for company, or just a quick dinner.
Note: Sweet potatoes are very high in Vitamin A, Vitamin C and have been called a “super food” for their nutrient density.
- 1 Sweet potato
- 1/4 cup dried cranberries
- 2 tbsp sliced almonds
- 1 tbsp brown sugar
- 1 tbsp honey
You will want to clean the skin of the sweet potato before you bake it. Once clean, poke holes around the surface of the potato with a knife. This allows it to breathe while it is baking. Cover the potato in tin foil and place in the oven on 350 degrees. The natural sugar in the potato will start to caramelize. It should take between 30 minutes to 1 hour to cook depending on the size of the potato. Check the potato after 20 minutes.
Note: you can also cook the sweet potato in the microwave without the tin foil on high for 10 minutes. Make sure you poke holes in the potato as stated above.
Once cooked you should let the potato cook for a few minutes. Slice it 5-10 times width wise allowing spaces to pour the cranberries and almonds.
Drizzle honey over the top and sprinkle the brown sugar. Top with cranberries and almonds.
