Smoked Salmon & Spinach Baked Eggs

You will need the following ingedients:

For baked eggs

  • 2 english muffins
  • 2 eggs
  • 1/2 cup cooked spinach
  • 1 oz. smoked salmon

For hollandaise sauce (optional)

  • 2 egg yolks
  • 1/2 tbsp lemon juice
  • 1/2 stick butter

You will want to toast two english muffins and place one half in the ceramic bowl.

I used frozen spinach, which I defrosted and placed on top of the toasted muffin half.

Crack one egg in each bowl. Do not break the yolk.

Add small pieces of smoked salmon top the top. Bake in the oven on 400 degrees for 10 minutes.

While the eggs are baking you can make the hollandaise sauce. Take two egg yolks and whisk into 1/2 tbsp lemon juice. Melt the butter in the microwave. Place the egg yolks and lemon in a glass or metal bowl over a double boiler (or a pot with 1/3 cup of water) and boil. You must continue to whisk or the eggs yolks will cook. Slowly whisk in the melted butter and you will see the mixture start to thicken. Once it gets really thick, remove from heat and season with salt and red pepper flakes. Spoon over the cooked eggs before serving.

You can serve in the ceramic bowl or remove from the bowl and eat as a sandwich.
