Poached Cod in Tomato Saffron Broth Over Spinach

I saw this recipe in Bon Appetit Magazine and thought it looked amazing!
You will need the following ingredients:
  • 2 garlic cloves chopped
  • 2 small cod filets (make sure you have bones removed)
  • 1/2 cup white wine
  • pinch of saffron threads
  • 2 thyme sprigs
  • 1 can whole peeled tomatoes (14.5 oz)
  • 2 bay leaves
  • 1 cup cooked spinach
Broth
Heat oil in a pan and add garlic and red pepper and cook for a few minutes (do not brown). Then add the tomatoes (crush with hands), wine, bay leaves, saffron, and ½ cup water. Turn on high and boil for 5-7 minutes. Season with salt and pepper.

Fish
Season cod with salt and red pepper and place in a pan. Cover and cook on low until cod starts to flake, 5–7 minutes. Again make sure there are no bones in the fillet.

Spinach:
Cook fresh or frozen spinach in a pan with garlic and oil. Spoon spinach into bowl and place cod in top. Gently transfer cod to shallow bowls and spoon liquid over. Garnish with thyme.

Serve with a glass of white wine and enjoy!
