I am a huge peanut butter and jelly fan. Sometimes I mix peanut butter and jelly in a cup and just eat it. That should give you an idea of how much I love it. These bars were perfect for me.
You will need the following ingredients:
- peanut butter cookie mix
- 2 bricks of cream cheese
- 2 eggs
- 3/4 cup of sugar
- 1 tbsp vanilla
- 1 jar of peanut butter
- 1 large jar of strawberry jelly
- de-shelled peanuts
First you will want to follow the step by step instructions on the peanut butter cookie mix and make a cookie dough. Place that on the bottom of the pan. Use your fingers to press the dough into the corners.
Next, you heat your oven to 350°F. In a separate bowl whisk the cream cheese, sugar, vanilla and eggs until the mixture is smooth. I like to use raw sugar, but white sugar will work as well. It’s ok if the mixture is not completely smooth. It will even out in the oven.
Then pour the mixture over the peanut butter cookie dough.
Place in the oven for 35-45 minutes. Note: if the top starts getting golden brown, place tin foil over the top until the middle is no longer soft.
Next you will want to let the bars cool in the fridge for at least an hour or two before adding the peanut butter and jelly.
While you are waiting, take a jar of strawberry jam and pour it into a bowl. Add 1/4 cup of water to make it less thick. Place it into a plastic bag so it can be drizzled onto the top of the bars.
When the bars are cooled, pour the jar of peanut butter onto the top of the bars and spread evenly.
Take a scissor and cut the edge of the bag of jelly so it creates a small hole. Then drizzle the jelly mixture in zig zags over the pea nut butter.
Sprinkle with peanuts over the top. Place the bars back in the fridge for another hour before cutting.
