Vegetable Chicken Soup

Snow Storm Janus hit New York today. I figured I would be indoors for the next 24 hours so I made my favorite chicken soup.

You will need the following ingredients:

  • 1 leek
  • 1 red potato
  • 1 parnsip
  • 1 onion
  • 5 celery stalks
  • 1 bag of baby carrots
  • 1 turnip
  • 1 yellow onion
  • 1 bunch of dill
  • chicken bouillon powder
  • 1 raw whole chicken
  • 1 package egg noodles

Take the chicken and place it in a large pot. Fill the pot with water so it covers the chicken completely.

Start chopping the vegetables. I usually do a thick chop of the parsnip, leek, onion, turnip, potato and celery. I pour the bag of baby carrots in whole.

Then take the whole bunch of dill and place in the pot. Turn the stove on high.

Once the water boils, pour in 6-8 teaspoons of bouillon powder and stir.

Cook the soup for at least 2 hours and let the chicken and vegetables cook. Once the chicken is cooked, remove the chicken from the pot and cut off the meat. Be careful because the chicken will be very hot. Dispose of the bones and leftover carcass. Place the chicken meat back into the pot with the vegetables.

Pour into a bowl and serve with dill or rosemary. Sprinkle with pepper.
