Roasted Spaghetti Squash with Herbs and Almonds

I love spaghetti squash and I am always trying to think of new ways to make it. I usually eat it with turkey meatballs and tomato sauce, but this recipe is a lighter alternative.

You will need:

  • 2 spaghetti squash
  • 1 cup shredded Parmesan cheese
  • 1 cup chopped almonds
  • 4 tbsp chopped rosemary
  • Olive oil

First, take the spaghetti squash and cut it in half length wise. Scoop out the seeds and Place face down on a cooking sheet. Put in the oven on 375 degrees for 1 hour.

While the squash is cooking, you will want to chop the almonds and the rosemary.

When the spaghetti squash is done, remove from the oven and let cool for at least 20 minutes.

Then use a fork and scrape the squash away from the rind. You will see it separate into spaghetti like pieces. Place in a bowl.

Next pour in the almonds, herbs and Parmesan cheese with 2 tbsp olive oil, salt and pepper.

Mix well and serve hot or cold. It is a great side dish or even main.
