As you can see, I have a small peanut butter obsession. In addition to that, I love puddings and custards. Chia seeds give the pudding a thick texture.
You will need the following ingredients:
- 3 large tbsp PB2 powder (powdered peanut butter)
- 1 cup almond milk (sweetened)
- 2 tsp vanilla
- 4 tbsp chia seeds
Take the cup of almond milk with the 2 tsp vanilla and whisk in the PB2 until the mixture is without any lumps.
Add in the chia seeds and mix well.
Place in the fridge over night. The chia seeds will have expanded and created a thick breakfast pudding.
