This was such a satisfying dinner. Instead of rice, I used quinoa, which is packed with protein. It is also filled with vegetables like cauliflower, mushrooms, onions, peas and corn to make you feel full. Quinoa is a complete protein, which means it contains the 9 essential amino acids your body needs.
You will need the following ingredients:
- 1 cup dry qunioa
- 1 cup corn
- 1 cup peas
- 1 cup chopped mushrooms
- 2 cups chopped cauliflower
- 3-4 tbsp soy sauce
- 2 small onions
- 3 eggs
Place the 1 cup of quinoa in a pot with 2 cups of water and boil.
Chop the onions and place in a pan with 2 tbsp olive oil. Let them sauté for a few minutes.
Add the cauliflower.
Then the mushrooms.
Let them cook until tender.
When the quinoa is done. Add the peas and corn.
In a small frying pan, scramble three eggs and then place into the quinoa mixture.
Then add the cooked vegetables and stir together.
Add soy sauce and serve.
