Ratatouille Soup

I love my vegetables and ratatouille is my favorite dish! I thought I would incorporate the two.

You will need:

  • 1 eggplant
  • 2 tomatoes
  • 2 cans peeled whole tomatoes
  • 2 bell peppers
  • 2 tbsp chopped garlic
  • 1 cup white wine
  • 4 cups chicken broth
  • 1 zucchini
  • 1 yellow squash
  • two small yellow onions
  • 3 bay leaves
  • 2 tbsp rosemary

First, chop and sauté the onions and garlic. Then after about 10 minutes, add all the vegetables chopped minus the tomatoes. Let them cook and get browned (approximately 10 minutes more).

Add the tomatoes along with the chicken broth, wine and bay leaves. Let it simmer for at least one hour.  Add rosemary, salt and pepper.
