I love baby bok choy and I always order it when I go out for sushi. Not only is this delicious, but this little green is extremely high on the ANDI Index, which measures nutrient density. A good friend reminded me of this very important fact and now I make sure it is a big part of my diet. It is also very simple to make, so why not make it a home!
You will need:
- two baby bok choys
- sesame seeds
- 1/2 cup (low sodium) soy sauce
- 1 tbsp grated tbsp ginger
- 2 tbsp honey
- 2 tsp almond oil
(They are such cute looking vegetables) Place the boy choy in the pan with the almond oil and turn on medium heat.
Mix the grated ginger, soy sauce and honey together. Then once the bok choy starts to wilt add half of the soy sauce mixture.
Once it is cooked through, pour the rest of the soy sauce mixture on and around it. Serve with sesame seeds.
