Snowed in and hungry today. This is a simple recipe and delicious. There is no flour required to make these yummy crepes. I am addicted to sugar so although these are super healthy, they are sweet which makes me very happy. Sweet potatoes are great because they are nutrient dense and give you the ability to satisfy your sweet tooth. In addition, protein helps curb cravings and make you feel full longer.
You will need:
- liquid egg whites
- 4 tbsp mashed sweet potatoes
- pumpkin seeds
Fill a bowl 1/2 the way with liquid egg whites. Then add 2 tbsp mashed sweet potatoes. Mix well so there are no chunks.
Pour it into a greased frying pan on high heat.
Note that the texture is much softer than an omelet so be careful since it is delicate. Once it starts cooking, fold the sides in and flip over.
Top with cinnamon and the remaining sweet potatoes and top with pumpkin seeds.
