I have seen these cakes all over instagram and pinterest and decided I needed to try them. This recipe is a combination of about 5 – 10 different recipes. I added a little, subtracted a little and made what I thought would work best. I was shocked that it worked. It has over 20 grams of protein and is super good.
You will need:
- 1 scoop vanilla (or chocolate) protein powder
- 1/2 tbsp baking powder
- 2 tbsp non-dairy french vanilla creamer
- 1 tbsp vanilla
- 1 large egg white
Mix the dry ingredients together and then stir in the rest. Place in a mug and microwave for 1 minute.
The topping is 3 tbsp PB2 mixed with water. Topped with peanut butter and chocolate chips (optional).
