Ok, clearly I have had a lot of time of my hands today. No work and stuck in the house all day. Bake, do zumba, cook, do zumba… make breakfast for tomorrow. This falls into “breakfast for tomorrow” category. Also, don’t be fooled by the appearance of these. They are soooo good! No flour, just egg whites, bananas and baking powder. You can add berries or chocolate chips, even peanut butter. Make them your own. I was shocked to learn of the power of baking powder. A tiny bit goes a long way. I saw this recipe on http://www.recipeboy.com and I’m very happy I did.
You will need:
- 2 egg whites
- 1 mashed banana
- 1/2 tbsp baking powder
Basically wisk these ingredients together and make sure the banana is very mashed.
Place them onto a hot frying pan greased with coconut oil.
This recipe yielded 5 small pancakes.
