Spinach Basil Pesto Over Yellow Squash Pasta with Pine Nuts

I received the Nutri Bullet as a gift and it is my new favorite kitchen accessory! I was so excited to make a pesto sauce.

For the pesto sauce, you will need:

  • 1/3 cup olive oil
  • 1 cup spinach leaves
  • 1 cup basil leaves
  • 1/4 cup pine nuts
  • 1/3 cup parmesan cheese

For the squash pasta, you will need:

  • 4 yellow squash
  • olive oil
  • thyme

So, lets start with the pesto sauce. Place the basil into the bullet with the olive oil and blend it all together. Then add the spinach leaves.

Then add the cheese and pine nuts.

Set the sauce aside.

For the squash pasta, you will want to take the squash and grate it as I show below.

Add some olive oil and thyme to the squash. Place the squash in the oven on 350 for about 30 minutes, stirring it every 10 minutes so it does not burn. When it is cooked, place in a bowl and top it with the pesto sauce, some more parmesan cheese and pine nuts.
