Chocolate Peanut Butter Pancakes

Good morning!! Its been freezing for the past few months here in NYC. I woke up today to a 45 degree morning. It feels like summer. Nothing makes me happier than peanut butter and a bright Saturday morning, so today was the perfect day to make these. I really try to be gluten-free when I can. I saw this Glutino pancake mix and thought I would use it and make my own directions.

You will need:

  • 1 jug Glutino pancake mix
  • 6 tbsp almond milk
  • 6 tbsp PB2
  • 3 tbsp cocoa powder

Per the directions on the jug, add 1 cup of cold water to the mix. I added 2 tbsp almond milk because it was very thick. Then add 3 tbsp cocoa powder and shake well. Pour 3- 4 inch circles of batter to make the pancakes.

Then make the topping, mix the PB2 with almond milk until you get the desired consistency.

Then pour the PB2 mixture between each pancake and top with the rest of the mixture.
