There is nothing better than starting your day off with a nutrient dense breakfast. This recipe combines tons of vitamin A, C, folate and protein. You will start your morning feeling great. It also tastes wonderful. The sweetness of the sweet potato breaks up the bitterness of the broccoli rabe and when it bakes in the oven it comes together nicely.
You will need:
- liquid egg whites
- 1 cooked & chopped sweet potato
- 1/2 cup cooked broccoli rabe
Pour the liquid egg whites into each ramekin 3/4 of the way.
Add the vegetables.
Place into the oven and bake on 350 for 10-15 minutes or until the egg whites are solid and white.
