There is nothing better than starting your day off with a nutrient dense breakfast. This recipe combines tons of vitamin A, C, folate and protein. You will start your morning feeling great. It also tastes wonderful. The sweetness of the sweet potato breaks up the bitterness of the broccoli rabe and when it bakes in the oven it comes together nicely.

You will need:

  • liquid egg whites
  • 1 cooked & chopped sweet potato
  • 1/2 cup cooked broccoli rabe

What is broccoli rabe, is it just the stems and leaves?

    1. Broccoli rabe is a variety of broccoli. It has long leafy stalks with small florets on the top.
