I had these bars years ago while in sleep away camp. I always wondered how they were made. I took a chance and made them with my own version. They were even better than I remembered.
You will need:
- 2 cups rice krispies cereal
- 2 cups peanut butter
- 2 cups powdered sugar
- 1 1/4 sticks melted butter
- 1 tbsp coconut oil
- 2 small bricks dark chocolate
Mix the peanut butter, melted butter, and powdered sugar in a bowl. Then add 1 cup rice krispies. Save the other cup for later.If the mixture is too liquid-like, add more powdered sugar.
Then pour into a glass or tin baking pan.
Then pour the other cup of rice krispies on top and place in the freezer while you make the chocolate. Place the chocolate and coconut oil in a metal bowl over boiling water (makeshift double boiler) until it melts. You fill a pot 1/3 of the way with water and start boiling. The metal bowl with the chocolate is on top of this pot.
Remove the peanut butter mixture in the pan from the freezer. Pour the chocolate over the top. Then place the entire pan back into the freezer for at least an hour or two. I suggest placing it in the freezer overnight.
Cut into bars. These are creamy and crunchy and amazing!! Keep them in the freezer or a very cold fridge until you are ready to serve or the peanut butter will start to melt a little.
These bars are my weakness!
