If you cannot tell by now, I am obsessed with breakfast! I was craving apple cinnamon oatmeal and thought it may be fun to eat the oats straight out of the apple. When you bake an apple it starts to get soft in the middle and the natural juices start to pour out. When you add oatmeal to it, the oats become infused with the juices and aroma. It is a warm and comforting way to start the day.
You will need:
- 1 apple
- 1/2 cup steel cut oats
- 1 tbsp brown sugar
- 5 walnuts
- 1 tsp cinnamon
First you will need to make the oatmeal. See my post on Steel Cut Oats. Then take one apple and core the middle. Do not cut all the way to the bottom. Create a bowl like shape.
Chop the excess apple and add it to the oats. Add cinnamon and walnuts. Scoop the mixture into the apple cup.
Top with a sprinkle of brown sugar and walnuts. Place in the oven on 375 for 20-35 minutes. The top will start to brown and the outside of the apple will get tender. Enjoy your warm apple bowl!!
