Sweet Strawberry Oat Jar

I like to call this the “Commuter Special.” If you commute to work and need to grab breakfast on the “Go” in the morning, this is for you. I get ready in the morning, grab a jar of oatmeal from my fridge and I’m on my way. Once I get onto my LIRR train, I can enjoy my oatmeal and cup of coffee. The strawberries are nice and sweet and tender from sitting overnight next to the hot oats. There is no need for sugar. For those few minutes you are eating these oats, you forget you are on a bus, subway, or train and feel like you are in happy place. Enough said.

Prepare the oats according to my Chia Steel Cut Oatmeal recipe. Chop strawberries and mix into the oats while they are cooking.

Then spoon oatmeal into the bottom of the mason jar, top with strawberries and repeat. Then close the lid on the jar and place in the fridge overnight.
