Cheesecake Oatmeal Pancakes

Dessert for breakfast??

These are flourless pancakes made with oats and egg whites, topped with a light cheesecake mixture. I have a slight obsession with cheesecake, so if I can sneak cheesecake into a recipe I will. For those of you who know me, you know cheesecake is one of my weaknesses. I love peanut butter cheesecake, oreo cheesecake, plain cheesecake, cheese filling in pies, cheese blintzes… I can go on. You get the point. There is really no need to go out and eat a piece of cheesecake when you can make these pancakes. I also eat a ton of oatmeal for breakfast, so I usually have a large container of it pre-made in my fridge.

You will need:

  • 3/4 cup cooked steel cut oats (in almond milk)
  • 3 egg whites
  • 1 tsp baking powder
  • 1 tbsp coconut flour

For the topping:

  • 1 packet splenda
  • 3 laughing cow cheese wedges
  • 1 tsp almond milk

Mix the oats, eggs and baking powder with a wisk.

Scoop small amounts into the frying pan.

Then take the laughing cow cheese, almond milk and splenda and mix it together so there are no lumps. Spoon the mixture between each pancake like a sandwich.

Tastes like dessert for breakfast! That is fine by me.

    Delicious! I’m hoping to do a cheesecake recipe this weekend over at mine – cheesetheday.wordpress 🙂
    My mom’s fave recipe uses Oreos for the base instead of crumbs – so yummy!
