Baked Zucchini Chips

I saw these chips in the store and when I looked on the label they were full of fat and calories. I thought I could do a much better job! In addition, the recipe was so simple that I wouldn’t mind making them multiple times. The fun part is you can add whatever seasoning you like. For these, I used garlic and cracked pepper, but you can use paprika or chili powder if you want something spicy. You can also use fresh herbs like rosemary or thyme with a little lemon juice.

You will need:

  • 1 zucchini
  • 1/2 tbsp garlic powder

I took one zucchini and sliced it into very thin pieces with my mandolin. You can also do this with a knife, but please be careful.

Place them onto baking sheet (sprayed with cooking spray). Then sprinkle the garlic powder, salt, and pepper onto each.

Place in the oven on 350 degrees for 35-45 minutes. Make sure you turn them over. They will start to curl up and get crispy.
