I love pudding and I have a soft spot for puddings and custards. Growing up I made tapioca pudding every time I went to visit my grandma in Florida. It was our thing. I have stacks of photos of me as a little girl being fed tapioca pudding by my uncle at my grandma’s house. This recipe is nostalgic for me and it brings back many fond memories. Chia pudding is very similar to tapioca pudding because the chia seeds expand when they sit in liquid, which has a similar texture and consistency to tapioca.
You will need:
- 1 cup almond milk (sweetened)
- 4 tbsp chia seeds
- 2 tbsp coconut flakes
- 2 tbsp cocoa powder
Mix all the ingredients together in a bowl and be sure to break up all the coconut flakes and cocoa powder.
Let it sit overnight in your fridge. In the morning it will be thick and rich.
Pour into a bowl and top with cacao nibs and sprinkle of coconut flakes.
