Maple Cheesecake Stuffed Strawberries

This sweet snack is great for company or just for yourself. It is easy enough to make just one. Of course, I ate all six! It was completely worth it.

I am very lucky to have two amazing aunts on each side of my family. One aunt on my moms side in particular has always given me cooking utensils, pots, pans and other kitchen accessories. She is extremely thoughtful and is always thinking of kitchen things I would like. I have accumulated many items over the years. Not only do I appreciate these items, but I have been putting them to use lately. I never thought I would find a purpose for the melon ball scooper. Well, guess what!?! I finally found a use for it… scooping the tops off strawberries! I promise to make my aunt stuffed strawberries for life.

For six strawberries, you will need the following:

  • 4 wedges (original flavor) laughing cow cheese
  • 3 tbsp maple sugar
  • 6 strawberries
  • 1 ziploc bag

Take the strawberries and slice off the stems. Then take a pairing knife or melon ball scooper and cut off a small piece of the tip of each strawberry (enough to fill in with cheesecake).

Then mix the maple sugar with the laughing cow cheese. Spoon the cheese mixture into a plastic ziploc bag. Move the cheese mixture to one side. When you are ready to pipe the cheesecake mixture into the strawberries, cut off the tip of the bag. Squeeze the mixture into each berry and top with a little more maple sugar.
