I love mashed potatoes, always have. I am not joking when I say this cauliflower spinach mash tastes just like it. It is creamy and hearty. With a touch of added spinach, it is even more nutritious than just plain cauliflower. Don’t let the GREEN scare you, this recipe rocks. I have a few friends that are scared of “health food.” Yes, this is healthy… and it is food, but it is not your typical health food. People often associate “health food” with tasteless, slimy, colorless items that look like science experiments. That may have been the case 10-15 years ago. However, the health craze in the US has a much larger following. Healthy is the new skinny and eating well is something most people want to be associated with. My point is, don’t be intimidated by the lovely green hue.
You will need:
- 1 head of cauliflower (chopped)
- 1 cup cooked spinach
- 1/3 cup almond milk
- garlic powder
Take the cauliflower and chop it up. Place it into a baking sheet and sprinkle it with garlic powder, salt, and pepper. Cook for 25-30 minutes on 350 degrees. While the cauliflower is cooking, cook the spinach in a pan. Remove the spinach and place it in a bowl. Press a paper towel onto the spinach to remove any excess water.
When the cauliflower is done, place the spinach, cauliflower and almond milk into a blender or nutri bullet. Add salt and pepper if necessary.
Cook the shrimp (I used frozen shrimp) in a pan with garlic powder, 1 tsp coconut oil and salt and pepper. When it is pink, remove from the pan and add on top of the spinach cauliflower mash.
