I am always thinking of healthy ways to enjoy your favorite dessert. I love banana cream pie and I love breakfast. Merging the two together made for a perfect morning. I have been known to make quite a mess in the kitchen. If a recipe includes sugar, salt, anything with small particles… they somehow end up on the floor. That just means I put extra love into my food, right? Ok, so do yourself a favor and place the bowl of egg white mixture in the sink when you are making this. You have to dip the bread into the egg mixture and then into the pan. Dipping things and placing them into other containers was never my thing. You may be more careful than I am and not have a problem, but don’t say I didn’t warn you. I definitely made a mess making this. The taste alone was worth it.
You will need:
- 1 banana
- 2 tbsp dairy free french vanilla creamer
- 2 tbsp plain greek yogurt
- 2 pieces bread ( I used gluten free)
- 2 egg whites
- 1 tbsp vanilla
Take the banana and mash it in a bowl, adding the greek yogurt. Set this aside.
Then take the vanilla, egg whites and creamer and mix in a bowl. Dip each piece of bread into it for a few seconds to let it soak. Then flip it over and do the same. Place in a pan and make the french toast.
Then cut the two pieces in half, like a sandwich. Spoon the banana mixture onto the bottom piece of french toast and top it with the top piece. Spoon more banana mixture over the top. It will start to dribble down the sides, which makes it super messy. If you eat it with a fork and knife, there will be less mess. Then top it with more bananas or banana chips!
