So, this morning while I was running on the treadmill, I was watching the food network. Yes, I watch food while I work out. Gives me a reason to run faster! I will run for food any day. They were making different types of omelets and I thought what a good snack that would be. I love spinach and onions, especially with sautéed garlic. Anyways, I came home and made an omelet of my own with egg whites, garlic, onions, spinach and feta cheese.
You will need:
- 4 egg whites
- 1/4 onion (diced)
- 1/4 cup cooked spinach
- 2 garlic cloves (chopped)
- sprinkle of feta cheese
You should start with the onion, garlic and spinach cooking in a pan. I added a tsp of coconut oil.
Give it a few minutes to cook and then add the egg whites.
Flip it over and then remove from the stove. I folded it in half and then again so it looks like a slice of pie. Serve with feta cheese sprinkled on top. The cheese will start to melt from the heat of the eggs.
