Lemon Chia Muffins (Gluten Free)

What’s better than lemon poppy muffins? Lemon CHIA muffins!! This was a complete test run and it came out perfect! They are gluten free, dairy free and are very low in calories. I am a muffin lover so I have been eating these all week with a big cup of coffee in the morning.

You will need:

  • 8 tbsp coconut flour
  • 2 bananas
  • 10 tbsp liquid egg whites
  • 3 tsp lemon juice
  • 1 tsp lemon zest
  • 2 tsp chia seeds
  • 4 tbsp almond milk
  • 1 tbsp baking powder

Mash the bananas and mix all the ingredients together. Spoon the mixture into a greased muffin tin. This will make enough for 6 muffins. Place in the oven on 350 degrees for 30 minutes.

Remove from the oven and enjoy!!

  1. Hi, please put me out of my confusion – the recipe says almond flour, and the bad in the photo is coconut flour. I presume it’s the latter?

    1. It’s coconut flour. Will have to fix that!
