Yes, I am at it again with the GREEN (and in honor of St. Pattys Day). Spinach is my favorite vegetable so I try to add it to meals when I can. I promise, you hardly taste it in these pancakes. However, your body is reaping the benefits of this little leafy green. It will thank you. The salty pistachios compliment the sweetened greek yogurt and make the pancakes taste like dessert. Dessert = happiness.
You will need:
- 3 eggs
- 4 tsp coconut flour
- 1/4 cup cooked spinach
- 1/2 tbsp baking powder
- 1/2 cup almond milk
- 2 tbsp honey
- 1/2 cup greek yogurt
I blended all the ingredients in my nutri bullet. If it is very thick, add a little more almond milk.
Pour the pancake mixture into a hot pan and cook like you normally would.
For the topping, I mixed plain greek yogurt, 2 tbsp honey, 1 tbsp vanilla and topped it with pistachios.
