Asparagus Hummus

I had a food emergency the other day. I came home from work and desperately needed a snack… I checked my fridge and I was OUT OF HUMMUS. I couldn’t believe I forgot to buy it at the store. It is my go-to snack after work. Although I was in a frenzy, I realized I had a can of chick peas and fresh baby asparagus. That is when my asparagus hummus idea came into play. I cooked up the asparagus quickly and blended it with my chick peas and spices. I have never had asparagus hummus before and this was amazing. I may never purchase hummus in the store again.

You will need:

  • 15-20 baby asparagus
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp lemon juice
  • 1 can chick peas

Take the cooked baby asparagus and chop it up. Place in the blender or nutri bullet with the chick peas, olive oil, lemon juice and garlic powder. Add salt and pepper. Blend away!
