Roasted Baby Carrots with Chive Yogurt Sauce

You will need:

  • 6 baby carrots
  • 1/2 cup greek yogurt
  • 2 chopped garlic cloves
  • 3 tbsp chopped chives

Take the carrots and season with salt and pepper. Drizzle a small amount of olive oil and place in the oven on 350 degrees for 25-30 minutes.

While they are baking, take the chives, garlic, greek yogurt and mix together. Add salt and pepper to taste.

Then remove the carrots from the oven and top with the sauce.
