Balsamic Mushrooms with Goat Cheese

I love balsamic vinegar on vegetables, especially mushrooms. Since mushrooms are a little denser than your average leafy green, they seem to fill you up faster. These cute button mushrooms have immune boosting and antiviral properties that are always good to add to your diet. Enjoy them hot, as a side side dish or even over a salad.

You will need:

  • 1 package button mushrooms halved (approximately 20)
  • 1/3 cup balsamic vinegar
  • crumbled goat cheese
  • olive oil

Place the mushrooms in a pan with 1 tbsp olive oil, salt and pepper. Let them cook for approximately 15 minutes. When they are nice and soft and the juices have come out, add the balsamic vinegar and let it cook for another minute or two. Then remove from the pan and pour into a bowl. Sprinkle with goat cheese.
