Sautéed Collared Greens

You always see collared greens in southern cooking. They are usually accompanied by comfort foods such as macaroni and cheese or BBQ ribs. I wanted to make a healthy version that was so good, there would be no need for those unhealthy food pairings. Anyways, this is it!

You will need

  • 1 large bunch of collared greens
  • 1 onion
  • 1 cup chicken broth (or vegetable broth for vegetarians)
  • 3 chopped garlic cloves

First you will want to remove the leaves from the stems. Wash them well.

Then chop an onion and let it sauté in a pan with garlic and some olive oil.

Add the collared greens (chopped)

Add the chicken stock and let it cook through. Let it cook until there is not too much liquid left and the leaves are tender.
