This dish is adapted from on the following recipe: Fit Sugar Cauliflower Pizza Crust.
You will need:
- 1 cup part-skim mozzarella cheese
- chopped chicken sausage
- 1 head chopped cauliflower
- 1 cup parmesan cheese
- 1 cup tomato sauce
- 4 tbsp corn meal
- 1 egg
Spray your pizza stone with cooking spray, corn meal and preheat oven to 425ºF.
Grate the cauliflower (using a box grater or nutri bullet).
Place in a bowl and microwave for seven minutes, or until soft. Remove from the microwave and let cool.
Take a few pieces of paper towel and press firmly into the cauliflower to remove all excess water. This step is very important.
Then mix in the egg, one cup part-skim mozzarella cheese, parmesan cheese, and salt and pepper.
Then pat it down into round crust on the pizza stone. Bake for 10 to 15 minutes, or until golden.
Top the pizza with the sauce, 1/4 cup parmesan cheese, and chopped chicken sausage. Bake in the oven until melted for another 10 minutes. Top with oregano and spices.
Remove from the oven and enjoy. This is so good!!!
