I am one of those people who love eating pumpkin dishes all year round. Pumpkins are in season in the colder months, but luckily you can get canned pumpkin puree regardless of the season.
You will need:
- 1 cup steel cut oats cooked in almond milk (See my steel cut oats recipe)
- 1/2 cup pumpkin puree
- 1/2 tbsp pumpkin pie spice
- 1 tbsp cinnamon
- 1 tbsp pumpkin seeds
- 2 tbsp honey
Mix the pumpkin puree with the cinnamon, pumpkin spice, honey and steel cut oats. Top with pumpkin seeds.
