For everyone making macaroons for passover, here is an easy and healthy way to make them while incorporating maca powder, which is a superfood with many health benefits. I also use camu camu powder sometimes instead of macs powder. It also has many health benefits. You can choose to withhold the maca/camu camu powder if you would like. I personally like adding it, but I understand that not everyone has that in their pantry. This recipe make 6 small macaroons.
You will need:
- 1 tbsp vanilla
- 3/4 cup shredded coconut (sweetened)
- 1/2 tsp maca powder
- 2 tbsp honey (use 4-5 tbsp if using unsweetened coconut)
- 1 egg white
- mini muffin pan
Mix all the ingredients in a bowl and fill each mini muffin tin.
Bake in the oven on 325 degrees for 15 minutes or until golden.
