Its Easter Sunday and there is nothing more festive than making Easter cookies and decorating eggs! I chose to make bunny cookies for dessert. These are so delicious. They are soft and chewy on the inside and taste like almond macaroons.
You will need:
- 1 cup almond flour
- 1 tbsp coconut oil (or 1 tbsp butter)
- 2 egg whites (or 1 egg)
- 6 tbsp honey (or 6 tbsp cup coconut palm sugar)
- Annie’s Homegrown GF Bunny Cookies
Mix the almond flour, coconut oil, egg whites and honey together in a bowl. Form small balls with your hand and place onto a baking sheet. Place one chocolate bunny cookie on each almond cookie before you bake them. Bake them on 350 degrees for 15-20 minutes or until slightly golden.
You will be very happy when these come out of the oven!
