Who doesn’t love bread pudding? I love eating it for breakfast with a big cup of coffee. The only problem is that there are so many extra calories in this sweet treat. This recipe does away with the extra calories and makes it a much lighter dessert. I ate the whole dish in less than 1 minute… enough said.
You will need:
- 2 thick slices of multigrain bread cubed (can also use GF)
- 2 egg whites
- 1/2 cup sweetened almond milk
- 2 tbsp natural maple syrup
- 1 tbsp cinnamon
- 2 tbsp chopped walnuts
- 1 tbsp vanilla
Place the chopped bread in a large ramekin.
Mix the rest of the liquid ingredients and pour over the bread. Add the walnuts.
Place in the oven on 350 degrees for 35-40 minutes.
Top with powdered sugar.
