Today I am wishing my mom the happiest of Mother’s Days! She is someone I wish to emulate in every aspect of life and I consider myself lucky to be her daughter. Not only did she teach me to cook, but she taught me to laugh and enjoy life. Not many people can say their mom is also their best friend. I am proud to say that I can.
This is my favorite gluten free cake. Growing up my mom and I always ate sweets in the morning. Whether it was a corn muffin, piece of cake, or a pastry, breakfast was our sweetest part of the day. I continued this tradition with my chocolate chip loaf cake and I enjoyed a piece daily with my morning coffee.
You will need:
- 1/4 cup coconut flour
- 1/4 cup chocolate chips
- 4 egg whites
- 2 eggs
- 1 tbsp coconut oil
- 5 tbsp coconut palm sugar
Mix all the ingredients together in a bowl and pour into a loaf pan.
Bake on 350 degrees for 30-35 minutes.
