Mini Peanut Butter & Jelly Muffins

Peanut Butter and Jelly is an all time favorite of mine. My dad loves apple jelly and is always eating it as his jelly of choice. However, I never use apple jelly in my sandwiches and always gravitate toward the strawberry and raspberry jellies. This time I was adventurous and gave the jar of chunky apples a chance. I am so glad I did!!

You will need:

  • 1 cup oats
  • 3/4 cup sweetened almond milk
  • 6 tbsp PB2
  • 3 tbsp honey
  • 1 tbsp vanilla
  • 1/2 tbsp baking powder
  • 3 egg whites
  • Apple jelly (I used Sarabeth’s Chunky Apple)

Mix all the ingredients together, minus the jelly. Pour the mixture into mini muffin tins and top each muffin with 1/2 tbsp of apple jelly.

Bake for 20 minutes on 350 degrees.
