I love rice cakes and am always looking of new ways to enjoy them. This egg white salad is light, easy to make and tastes even better on a crunchy cracker.
You will need:
- 5 hard boiled eggs chopped (whites only)
- 1 chopped bell pepper
- 2 tbsp whole grain mustard
- 2 rice cakes
Basically, it is pretty simple. Mix the chopped egg whites with the bell pepper and whole grain mustard. Add salt, pepper and some fresh herbs if desired and spoon it onto a rice cake.
