Blueberry Pie Greek Yogurt

If you love blueberries and blueberry pie, then this will make your mouth very happy!! One Sunday evening, my mom and I were brainstorming what we should do with our bag of extra blueberries. We thought it would be a good idea to cook them and add the mixture to our morning breakfast. She prefers greek yogurt in the morning and I am a fan of oatmeal. This recipe works for both. I even pour the blueberry mixture over my egg whites for a sweet breakfast.

  • 2 cup blueberries
  • 1/4 cup water
  • 1 tsp of minute tapioca
  • 1 packet of Splenda
  • 1 tsp vanilla

Cook the blueberries in a pot on the stove with water and tapioca for 20 minutes. Remove from the stove and let it cool for a few minutes. Then add Spenda and vanilla. Serve it with Greek yogurt. You can also serve it over cottage cheese or oatmeal.
