This broccoli cauliflower mash with caramelized onions is full of fiber, antioxidants and immune boosting properties! On the outside this bright colored mash may seem intimidating to those who don’t love greens. However, taste is all that matters. This delicious mash tastes just like mashed potatoes with a hint of broccoli mixed in and a slight sweetness from the onions. It is a great recipe for those who are bored with traditional side dishes.
You will need:
- One head cauliflower
- One head broccoli
- One large yellow onion
- 1/4 cup original almond milk
- Garlic power
Take one chopped head of broccoli and one chopped head of cauliflower and place on a baking sheet. Drizzle with olive oil, garlic powder, salt/pepper. Place in the oven on 400 degrees for 15-20 minutes.
Then sautee one large yellow onion in a pan until caramelized.
Remove the broccoli and cauliflower from the oven and set aside.
Place the cooked broccoli, cauliflower and onions in a nutri bullet with 1/4 cup almond milk and serve.
