Skinny Banana Oat Muffins

Like banana nut muffins? Me too…

Unfortunately, whenever I look at the calories on the label, they are extremely high. This recipe is a game changer. You can have your banana nut muffin and eat it too!! Well.. without feeling guilty that is.

You will need:

  • 3/4 cup sweetened almond milk
  • 4 tbsp agave nectar
  • 1 chopped banana
  • 1 tsp baking powder
  • 3 egg whites
  • 1 cup oats
  • 1/4 cup chopped nuts (I used pistachios, almonds and walnuts)

Mix the dry ingredients first: oats, baking powder, nuts and chopped banana.

Then add the egg whites, almond milk, and agave nectar.

Mix well. Using an ice cream scooper, place one spoonful of the mixture into a greased muffin tin. I placed sliced bananas on top (optional).

Bake on 350 degrees for 20-25 minutes or until the tops begin to get golden.

Take them out of the oven and let cool.

They are delicious and taste just like banana bread.
