This Tiramisu Layer Cake is gluten free and dairy free for everyone who is wheat, gluten and dairy sensitive. It is also made from healthy ingredients, which allows you to enjoy a sweet treat without the extra calories. For this cake, you will need:
- 2 tbsp coconut flour
- 2 egg whites
- 1/2 tbsp baking powder
- 1/4 cup almond milk
- 1 tsp vanilla
- 4 tbsp sugar
- 2 tbsp honey
- 1/2 cup dairy free yogurt
- 2 shots espresso liqueur
- 1/4 cup strong coffee
Place the mixture of coconut flour, egg whites, baking powder, sugar and almond milk in a greased mug. Place it in the microwave for 2 minutes.
Once the cake rises, remove the cake from the mug and slice it into layers. Dip each slice into the coffee and espresso liqueur mixture for 5 seconds.
Once the cake has soaked, remove and place on a plate to rest.
For the filling, mix the dairy free yogurt, honey, and vanilla. Spoon the mixture onto each cake layer and create a tower. Top with cocoa powder.
