Often, people think healthy means “less tasty.” There are so many ways to add flavor and replace unhealthy ingredients with nutritious ones that taste good! Lets take this rolled chicken recipe for example. The original recipe calls for chicken breaded in flour, bread crumbs, butter and eggs. Instead of using carb and calorie dense ingredients to coat the chicken, I used garlic powder, salt, pepper, oregano, onion powder, a spray of olive oil and a sprinkle of gluten free bread crumbs. Also, instead of full-fat cheese, I used part skim mozzarella and added asparagus for some extra vitamins. This recipe cuts calories and adds deliciousness!
You will need:
- chicken breasts (4 pieces)
- onion powder
- garlic powder
- gluten free bread crumbs (4 tbsp)
- olive oil
- mini grilled asparagus (approximately 16)
- part skim mozzarella string cheese (4 sticks)
First, preheat your oven to 350 degrees. Coat each chicken breast with a few sprays of olive oil (you can use a spray bottle if you would like). Then add a sprinkle of onion powder, garlic powder, oregano, salt and pepper to each side of the chicken breast. Then place 4 grilled asparagus pieces (cut in half) on the breast along with one string cheese (cut in half).
Then gently roll the chicken as you would a burrito and fasten with a tooth pick.
After the breast is rolled, add one tablespoon of gluten free breadcrumbs to the top of the rolled breast. Place it in the oven for 30 minutes until the tops of the breasts start to become golden. Remove each breast from the oven and place beside your favorite vegetable or side dish.
