Spinach & Sausage Egg White Bake

My husband and I just came back from our honeymoon to Greece. While away, we consumed at at least 2 large blocks of feta cheese per day. We ate so much of it that I came to think of it as part of my everyday meal and craved it when we did not have it. I ate it on my eggs for breakfast, on my salad for lunch, as a mousse for an appetizer and baked into whatever dinner I ate (see pictures below). . We sometimes had it incorporated into our dessert as fried feta with honey. I started to rate each city we traveled to by the taste of their feta cheese.

You could say I became a feta cheese SNOB. So, you could image I would have a little bit of an issue when we came back to the states… feta cheese withdrawal. When we came home, I went to the supermarket and bought 5 different brands of feta cheese. I hated them all. None of them compared to Greece and I was frustrated. So, I decided to do some research on which brands were authentic and would give me the creamy light texture of the greek feta. I finally found one!! We stumbled upon President’s feta cheese (at Costco). I was so happy– it was delicious. So, in my attempt to get my daily feta cheese fix, I have incorporated some feta into this recipe. You can add as much or as little as you want.

This recipe is a light and fluffy egg white bake that is full of protein and flavor. I also love it because of its versatility– you can eat it for any meal. Its a great when you need a healthy snack and is packed with vitamin c and vitamin a. I hope you enjoy it as much as I do.

You will need:

  • 4 spicy chicken sausages (cooked)
  • 1/4 cup scallions
  • 1 cup frozen chopped spinach
  • 12 egg whites
  • 3 heads of broccoli
  • 2 tbsp coconut oil
  • 1/8 cup feta cheese

Take the 3 heads of broccoli and chop them up. Place two tbsp of coconut oil in a pan over medium heat and add the broccoli.

Then chop up the cooked chicken sausages and add them to the sautéed broccoli.

While they cook, start to separate your egg whites.

Once the broccoli is tender, add the frozen spinach to the pan as well. Cook until the spinach is defrosted. Remove the mixture from the pan and place in a large bowl.

Add the egg whites to the mixture and place in a square glass baking dish. Sprinkle with the scallions. Place in the oven on 350 degrees for 40 minutes. About half way through, sprinkle the top with a little feta cheese. 2016-10-16-15-31-10

Remove from the oven and let sit for 10 minutes. Cut into squares and serve.

    First, welcome back home. Wow! Feta cheese galore. I love this. Using egg whites is healthier than the norm casserole using whole eggs. This is something I can make for my hubby. It looks delicious. Thanks for sharing your recipe. 🙂
