These grain-free peanut butter cookies are great for breakfast or for an afternoon snack. I tend to snack on these when I am short on time in the morning or when I need an afternoon energy boost. They are high in protein and potassium and taste amazing! They are also dairy-free, wheat-free and gluten-free. There are only 4 ingredients and the recipe is super simple.
You will need:
- 1/2 cup peanut butter (I used Justin’s Honey Peanut Butter);
- 1 egg;
- 1 tbsp coconut flour;
- 1/2 mashed banana;
- 3 tbsp Honey (optional);
If you use peanut butter that is already sweetened there is no need for the honey. However, if you use natural peanut butter without sugar, you will want to add honey so it is sweet.
First, mash the banana. I like to leave it a little chunky. Then add the peanut butter and the egg.
Mix these three ingredients and then add the coconut flour. The coconut flour helps bind it together.
Then pre-heat your oven to 350 degrees while you begin to form cookie balls. Place the balls on a greased cookie sheet. Take a fork and press the balls down so they are flat, leaving the fork imprint.
Bake the cookies for 15 minutes on 350 degrees. I hope you enjoy them!!
